The bolita bean is similar to a pinto bean. It is high in protein, but a little sweeter with a creamier texture, and they seem easier on the digestive system.
If you're not familiar with the bolita bean, it is a small pinkish bean similar in shape and size to the pinto and cooks in a relatively short amount of time. They have a nutty, earthy, and slightly sweet taste. Their texture resembles meat; that’s why they are quite perfect for baking. Bolita beans will absorb what ever spice you put into them making them a great choice for making BBQ beans.

Place the dried beans in a large bowl and cover them with enough water to be two to three inches above the beans. Allow the beans to soak in the bowl on the counter for about 8 hours, or overnight.

Thoroughly rinse, drain, and sort the soaked beans. Set aside.

Add the beans to the slow cooker, along with all of the remaining ingredients.

Stir just to combine.

Secure the lid tightly on the slow cooker and allow to cook on low for about 9 hours.
Taste the beans for tenderness and check for seasoning. Add extra salt, etc. if needed. Servings: 6
